Shooting Star Creamery’s Capricorn Blue Cheese is a beautifully balanced goat’s milk blue with subtle, complex flavor. Once penicillium is added to the young wheels, they are carefully pierced with needles, allowing air to flow in and encourage those signature blue veins to bloom. The result is a moderately crumbly cheese with a mushroomy character, earthy goat’s milk flavor, and a delicate tang on the finish. It’s a fresh take on a blue that’s elegant and approachable.
Shooting Star Creamery is the brainchild of Avery Jones, daughter of Reggie Jones of Central Coast Creamery in Paso Robles, California. After growing up helping in her father’s creamery, Avery launched her own brand—fittingly named Shooting Star—to both pursue her cheesemaking ambitions and support causes she cares about. A portion of profits goes to veterans and amputees, tying her cheesemaking craft to a greater purpose.
Capricorn Blue is made with goat’s milk from the Central Coast of California and is ideal for those who love blue cheese but want something a little lighter and brighter. It’s delicious crumbled into salads, paired with fruit and honey, or served as an alternative to cow’s milk blues on a cheese board.
