Take an award-winning goat’s milk cheese from Spain and add the perfect balance of truffles, and you get The Truffle Kid. Made by Central Quesera Montesinos exclusively for Mitica in Jumilla, Spain, this unique semi-hard cheese is made from the rich milk of the Murcian-Granada goat breed. Queso de Murcia DOP is pierced during aging and black truffle paste is introduced into the cheese, giving it a stunning marbled appearance. The rind is also spread with black truffle paste, contributing to a strong but balanced truffle flavor and aroma. The cheese starts off lactic and mild with a sweet and tangy finish. The marbled truffle paste adds a lovely truffle flavor and aroma that plays well with the existing flavors of the cheese rather than overpowering them.
The delicate flavors and aromas make this a star of your cheese plate. Simply serve with fresh bread, jamon, marcona almonds, grapes and your favorite red. Barolo wines always work well with truffles. We enjoyed Cava with this cheese too. The Truffle Kid grates nicely, so it is easy to elevate pizza, pastas, risottos, eggs or Mac 'n' cheese.
