A part of Smoking Goose’s Old School Salumi Series, this Salame Piccante brings the heat! Made with pork and seasoned with garlic, anise, red wine, and a hefty dose of spicy paprika, it’s a bold salami that pairs well with aged cow’s milk cheeses and creamy blue cheeses. Use it to garnish a bloody mary, toss it with eggs, or slice thinly and serve atop pizza.
Founded by chef Chris Eley in 2011, Smoking Goose is a Downtown Indianapolis staple for artisan charcuterie. Every cut of meat is sourced from local farms where animals are humanely raised and never treated with antibiotics or hormones. Their products are handcrafted the traditional way—patiently cured, smoked, and packed with character.
Ingredients: Pork, sea salt, dextrose, spices (chili powder, anise, garlic, pimenton piccante), red wine, lactic acid starter culture, vegetable powder (celery juice, sea salt), natural hog casing.
