A semi-hard sheep’s milk cheese hailing from the Italian region of Lazio, Il Pastore cheese can be thought of as the Italian version of Manchego. Aged for four months, it has a nutty, buttery, slightly sharp, full-bodied flavor, with a thin brown wax rind giving way to a pleasingly firm, light golden paste. Use as you would Manchego, served alongside cured meats, Marcona almonds, quince paste, apples, rosemary honey, fig jam, and aged Balsamic vinegar.
