Supramontes. In fact, Sardinia is the largest producer of pecorino in Europe. The Cooperative of Ovine Breeders (CAO) was created in the 70s by a group of shepherds in order to preserve and maintain their dairy tradition. This cooperative has grown through the years and milk is collected from the provinces of Oristano, Cagliari and Nuoro and processed within 24 hours.
Pecorino Sardo Dolce DOP is a sweet, tender sheep's milk cheese aged for a minimum of 20 days. Slightly straw colored with some eyes, this lovely table cheese has a sweet and delicate flavor celebrating the aromas of the Sardinian pastures. Enjoy with a full-bodied red wine, at the beiginning or end of a meal or to accompany savory dishes.
