After Glow is inspired by Langres, a washed-rind masterpiece from the Champagne region of France. There’s one big difference from its inspiration, however: Each wheel of After Glow is washed in a Belgian-style red ale made with local cherries, from Wisconsin-based New Glarus Brewing Company. The end result is a gorgeous, fruit-forward goat cheese with a slightly fruity aroma and a flavor that’s clean, mineral-y, and slightly salty. It’s incredibly rich and creamy, and is best enjoyed at room temperature with ripe fruit, nuts, honey, or on a fresh baguette with cornichons and French mustard.
