A truly crowd-pleasing cheese with a great name to boot, Drunken Goat is a mild, smooth, creamy semi-firm cheese that’s made from goat milk but isn’t “goaty” at all. During its 60-day aging process the cheese is soaked in Monastrell grape-based Doble Pasta, a traditional wine of Murcia, the Spanish region in which it’s made. The resulting cheese has a striking wine-colored edible rind (hence the name) that makes for quite a contrast with the white paste inside.
The wine lends a slight grapey flavor to the cheese, but it’s otherwise incredibly approachable and mellow, with a sweet, milky flavor. Pair it with dried or fresh figs, Marcona almonds, candied walnuts, and cured Spanish meats.
