Straight from the gastronomic capital of Piacenza, this Salame Milano is made by a family-owned company that’s been producing stunning salumi since 1979. It starts with pork from Italian pigs from the regions of Emilia Romagna and Lombardia, which is finely ground (the fine grain is what defines that variety of salame), mixed with a mild spice blend, stuffed into casing, and dry-cured for at least two months using a time-honored, traditional process.
The resulting salami is mild, delicate, sweet, and not too salty, with a firm but still tender texture. It’s great when sliced thin and added to a sandwich, or sliced slightly thicker and enjoyed on its own or as part of an Italian charcuterie board with Italian cheeses like fresh mozzarella and pecorino Romano.
