Roelli Cheese Haus has been producing some of Wisconsin’s finest cheeses for more than 100 years, and their Red Rock Cheddar demonstrates just how talented fourth-generation head cheesemaker Chris Roelli is. This brick-shaped cheese starts off like a traditional orange American-style cheddar, but it’s inoculated with blue cheese cultures.
After at least 60 days of cellar aging, it emerges with a natural bloomy rind and a mild flavor with a hint of cheddar sharpness and just enough blue cheese funk so you know it’s there. It’s creamy and sliceable (not crumbly like some cheddars and blue cheeses). It’s spectacular in a sandwich or melted into a grilled cheese, and on a cheese board alongside apples and quince paste.
