Bay Blue is made from pasteurized, rBST-free cow’s milk, with traditional rennet, and aged for 90 days to develop its signature balanced flavor.
Point Reyes Farmstead Cheese Company has been a family-run operation on Tomales Bay since 1959, when Bob and Dean Giacomini began producing some of California’s highest-quality milk. In 2000, their four daughters returned to the farm and transformed the business into an artisan creamery. The result was Original Blue—the state’s first classic blue cheese—and later, Bay Blue, which reflects the coastal terroir of their Northern California farm. The Giacomini family continues to produce handcrafted cheeses that celebrate their heritage and sustainable farming practices.
