We have always been fans of Point Reyes Farmstead Cheese Company. It began with their famous Original Blue, then their lovely, buttery Toma, now Bay Blue! This is a fabulous blue with a natural rind. The purity of milk shines through all of Point Reyes cheeses, and Bay Blue is no exception. Made from pasteurized Grade A cow's milk from the Giacomini family's herd where the cows are raised from birth on their property. They have complete control over their milk from start to finish and there is no doubt that the flavor of the milk is unique. The terroir plays a big role in the milk. Located in stunning Point Reyes in western Marin County, California, the early morning fog rolls in from the Pacific and lightly salts their sleepy, certified organic pastures, which accounts for the majority of their cows diet.
Inspired by the sheer natural beauty of their coastal climate and locale, Bay Blue is a rustic-style blue cheese reminiscent of Stilton. It is known for its mellow flavor with earthy tones and sweet, salted-caramel finish. This is a great cheese course blue, paired with toasted hazelnuts. Delicious melted into mushroom risotto, topped on grilled flatbread, or paired with toasted hazelnuts and stone fruit. Try crumbled on pine nut crostini or an apple tart.
