For perishable orders, we line our shipping boxes with Tempguard - a unique, padded insulator made of 100% pre-consumer recycled paper material. We further control the temperature with recycled kraft paper fill and non-toxic frozen gel packs. In the summer months, we may include dry ice to ensure fresh delivery in very hot weather.

    Pecorino Toscano Stagionato DOP from Caseificio Il Fiorino is a beautifully aged sheep’s milk cheese produced in the Italian region of Maremma from locally-sourced milk. Aged for at least four months, it develops a firm, dense texture and a deep, savory flavor with nutty, buttery notes and a touch of saltiness. This DOP-protected cheese is made according to traditional methods using high-quality local sheep’s milk, and Il Fiorino — renowned for its artisanal approach since 1957 — is one of the region’s most respected producers. The result is a cheese that’s rich, complex, and incredibly satisfying.
    This aged Pecorino is endlessly versatile on a cheese board or in the kitchen. Enjoy it shaved over roasted vegetables or pasta, crumbled into salads, or sliced alongside Tuscan salumi and crusty bread. Its bold flavor stands up well to sweet accompaniments like fig jam, fresh pears, or a drizzle of chestnut honey.
