White Sturgeon, Acipenser transmontanus, is farmed in ponds of fresh artesian water in Italy, and fed a natural diet very similar to what they would have in the wild. The white sturgeon produces a sophisticated caviar that many liken to the beloved Russian Osetra, with a smooth texture and a nutty taste that has a pleasant intensity and a buttery aftertaste. Varying in color from light to dark grey, it shines with glossy pearlescence, shimmering beautifully. Farm raised caviar is a great sustainable option, considering the severely depleted wild sturgeon populations.
