Dunbarton Blue Cheese is the flagship cheese of Roelli Cheese Haus, which has been crafting fine cheeses in the lush hillsides of southern Wisconsin for more than 100 years. The creation of fourth-generation cheesemaker Chris Roelli, his hand-crafted cheese is made in the style of a traditional English-style cheddar, but it’s inoculated with blue cheese cultures.
After 90 days of cellar aging, the end result is a rich, firm, dense, creamy cheese that’s got the best of both worlds: The sharp, nutty earthiness of cheddar and the piquant bite of blue cheese, with a bit of mustiness from the natural rind. The veining is minimal and the blue cheese notes aren’t too sharp, however, so Dunbarton is just an ideal all-around cheese; it’s great enjoyed on its own on some crusty bread, crumbled over a salad, in a ham sandwich, or on a cheese board with dried fruits, toasted nuts, and pickles.
