Cacio de Roma is the name of a typical sweet, light-bodied cheese from the Roman countryside. Unlike most Italian pecorinos, most of which are made in Sicily or Sardinia, Cacio de Roma is still made in Lazio, near Rome. Compared to Pecorino Romano, Cacio de Roma is younger and a more suitable table cheese. It has a milder flavor and aroma, as well as a more creamy texture, qualities which are difficult to find in a hard cheese.
