Brick cheese is synonymous with Wisconsin. Invented there in 1877 by Swiss-born cheesemaker John Jossi, it’s a semi-soft cheese that’s sweet and buttery when young and nuttier and more pungent when aged. It’s also a great melter, and is the primary cheese found on traditional Detroit-style pizza. Widmer’s Cheese Cellars, based in Theresa, Wisconsin, has been producing some of the state’s finest cheeses – including Brick Cheese – since 1922, and Master Cheese Maker Joe Widmer is taking it to the next level with this Aged Brick Cheese Spread.
This spread is made with a combination of Aged Brick Cheese and White Cheddar, and it’s an absolute crowd-pleaser. The Cheddar lends it some sharpness, and the Aged Brick gives it nuttiness and complexity. It’s smooth and buttery, and is the perfect accompaniment to crackers, sandwiches, grilled cheese, and burgers.

Ingredients: Sharp cheddar cheese and brick cheese aged 9 months (pasteurized cultured milk, salt, enzymes), water, reduced lactose whey, cream, whey, sorbic acid (preservative), sea salt, lactic acid, guar gum.
