Made just south of Dublin, Wexford Cheddar is a mature, twelve-month cheddar perfect for serving with brown bread and chutney. Wexford Creamery was set up in 1959 by a group of local Wexford dairy farmers and businessmen and produces delicious cheese, cream, and milk. Today, this co-operative owned dairy banks on their most valuable asset; the Friesian cows of County Wexford that produce some of the creamiest milk found on the Emerald Isle. This milk is skillfully turned into sharp Irish cheddar as it ages for at least a year. Due to the richness of the milk, this cheese still keeps a buttery flavor once it comes out of the Wexford aging rooms. Enjoy Wexford Mature Cheddar with a pint of good Irish ale, or a crisp glass of white wine.
