Ubriaco literally means "drunken. Ubriacos are traditionally bathed in wine, but Sergio Moro has done something a little different by bathing his cheese in his friend's red microbrew. Sergio Moro of Moro Latteria di Moro Sergio in Oderzo in the province of Treviso, Veneto in northern Italy uses whole milk from the local cooperative dairy that his family has been a member of for over 50 years. Moro's cheeses are made by cheese makers at the dairy under his specifications, Moro then takes it from there. In this case, wheels are placed in barrels and bathed in local pure malt red ale for about 30 days. Then they are allowed to dry with natural ventilation, that develops an amber-straw colored rind, fruity and full-flavored, with an unmistakable toasted malt flavor. An aromatic semi-hard cheese, Ubriaco alla Birra is perfect accompanied by a red ale. Cheese & Beer lovers rejoice!
