The Ortiz family has been committed to traditional fishing and preserving techniques for more than 130 years. To help protect the marine ecosystem and keep their catch sustainable, they catch all of their sardines in the Bay of Biscay only during the traditional fishing season between August and November, using a technique called purse seine fishing, which results in no discards.
These Spanish sardines are cleaned by hand, one by one, before being fried in olive oil and carefully packed. The flavor is rich and buttery, and the strong flavor is mellowed by the olive oil. They’re loaded with heart-healthy omega-3 fatty acids and also rich in vitamins B12 and D. And like fine wine, they’ll only get better with age. Add them to salads, serve them on toast drizzled with olive oil and lemon juice, or on a sandwich with avocado.
