This cured, smoked, cooked pancetta may look a little different from the spiral-shaped pancetta you’re more used to seeing. Not only is it flat, it also differs from traditional pancetta in another major way: It’s smoked over beechwood and cooked. It closely resembles bacon, so use it in the same way, alongside eggs, crisped and tossed with vegetables or in salads, and in pasta dishes.
