Manchego is Spain's most famous cheese. Produced in La Mancha in Central Spain, true Manchego is made from 100% sheep's milk. Cheeses from Spain are commonly made from sheep's milk because most of the territory is rocky and dry-- unfriendly to cows but suitable for raising goats and sheep. The abundance of wild herbs on Central Spain's grazing lands gives Manchego a special taste and aroma.
Aged for 12 months, this particular Manchego is known for its firm, flaky texture and complex flavor, which is enhanced by its extended aging process. Over 12 months, the cheese develops a nutty, slightly piquant taste with a lingering, rich finish, thanks to the sheep's diet of wild herbs from the estate where they roam. It's often celebrated for its balance, offering a strong yet refined flavor that is less salty than many other Manchego varieties. The careful aging process and use of raw milk contribute to its smooth, well-rounded taste.
