This award-winning pasteurized Spanish Manchego cheese is nutty and full-flavored. It also boasts the coveted DOP designation, meaning it’s crafted exclusively from the milk of Manchega sheep, which graze in the Albacete, Ciudad Real, Cuenca and Toledo provinces of La Mancha. It’s made between August and December, when the milk is the richest, and sports a patterned rind that evokes the time when cheese was traditionally wrapped in sheets of woven grass. Its crumbly texture and assertive flavor makes it ideal for eating out of hand as opposed to cooking with—enjoy manchego as part of a tapas spread, alongside spicy chorizo, honeyed dates, and buttery marcona almonds.
