Made with milk from Blakesville’s own herd, it’s lactic-set for a creamy, almost mousse-like texture that melts on the tongue. A thin, wrinkly Geotrichum rind gives it just the right amount of earthiness, while the flavor starts off bright and citrusy, deepening into a gentle saline finish with a whisper of barnyard funk. NOTE: white fuzzy growth on the rind is desired and normal on this cheese, and it is edible.
Enjoy it fresh and young for a zippy, tangy bite, or let it age a little for a richer, more complex experience. Either way, it’s perfect with a drizzle of honey, a crisp white wine, or simply spread onto a warm baguette.
