Fromage blanc, or “white cheese,” is a fresh, unaged cow’s milk cheese and the purest expression of the flavor of the milk. In the case of Briar Rose’s fromage blanc, the milk comes from organic Oregon Ayrshire cows, which is famed for its clean, fresh, sweet flavor. Think of this as the cow’s milk version of goat chevre – it has that similar spreadable texture, but the flavor is buttery with hints of straw, citrus, and vanilla ice cream. Think of it as a cross between the best whipped butter and cream cheese and use it accordingly; it’s incredibly versatile, so spread it on toast or bagels, combine it with herbs and garlic for a spread, mix it with some honey and serve with fruit, swirl it into soups, or use it in place of sour cream. Of course, it’s also at home on any cheese board.
Briar Rose Creamery, founded in 2008 by cheesemaker Sarah Marcus, is a small artisan creamery nestled in Dundee, Oregon, amid lush forests and the renowned pinot noir vineyards of the Willamette Valley. Every cheese is handcrafted from start to finish using locally sourced dairy, with milk coming from two nearby family-owned farms.
