After reducing by nearly a fifth of its original volume, the must is aged for four years in oak barrels alongside the “old mother” Vincotto, developing layers of complex sweetness and mellow acidity. The final touch comes when figs are added, infusing the vinegar with rich, fruity depth before it is patiently rested and bottled.
