Made with hand-trimmed pork collar cured with seasonings including garlic, black pepper, paprika, and Calabrian chile, Smoking Goose’s coppa is mild and delicate, and the perfect addition to charcuterie boards and Italian sandwiches alike. This coppa won the 2019 Good Food Award!
Founded in the heart of Downtown Indianapolis by chef Chris Eley in 2011, Smoking Goose has established itself as the home of some of the finest old-world charcuterie in the Midwest, and perhaps all of America. They source all their meats from small family farms in Indiana and neighboring states, with all animals raised as nature intended: antibiotic-free, growth hormone-free, 100% vegetarian fed, and no gestation pens. All of their meats are produced the old-fashioned way, slow-cured and smoked as it’s been done for hundreds of years.
