Founded in 2009 by Elias Cairo, Olympia Provisions is Oregon’s first USDA-approved salumeria. Cairo, a first-generation Greek-American, grew up around charcuterie thanks to his father’s home-curing projects. Inspired by European techniques learned through travel and apprenticeship, Cairo built Olympia Provisions with a commitment to craft: antibiotic-free pork, freshly ground spices, natural casings, and slow, traditional aging methods that produce nuanced, complex flavors in every product.
