At first bite, this creamy, rich goat’s milk cheese from the Lombardy region of Italy will amaze you. This little gem is made by the master affineurs at Arnoldi in the mountains of Val Taleggio. Aromatic and buttery, it has the typical acidity of goat’s milk cheese and a good dose of funk. Because of its small size and unique way of washing (a closely guarded secret of the Arnoldi family), Capriolina has a more pronounced flavor than larger washed rind cheeses. This cheese is a real superstar, so simply serve with your favorite crostini or with fresh, crusty bread and fruit.
