Ben and Sam Spence began making Yoredale in 2022 on their family farm in Wensleydale, reviving a nearly forgotten tradition of raw-milk Wensleydale production. With early support from Neal’s Yard Dairy, their cheese has quickly become celebrated for its authenticity and handcrafted quality. Each wheel is clothbound and aged on wooden shelves, a practice that develops the rind and enhances complexity in the paste. Their work honors Yorkshire’s monastic cheesemaking roots while bringing a fresh interpretation to modern cheese lovers. It’s an artisan expression of place and history that tastes as good on the board as in the kitchen.
