Wilde Weide Gouda is an incredible Dutch farmhouse (Boerenkaas) cheese, crafted from raw, organic milk by Jan and Roos van Schie on their small island farm, Zwanburgerpolder. Made in tiny batches from a micro-herd of Red Friesian and Montbeliarde cows, this cheese is hand-pressed and aged for three months on the farm before being transported to Amsterdam. There, it spends another year maturing under the care of renowned affineur Betty Koster of L’Amuse.
Aged for a total of 15 months, Wilde Weide develops a deep golden hue, firm crumbly texture, and bold, complex flavors, grassy and floral with notes of bourbon, caramel, and a crystalline crunch. Serve it with dried fruits, toasted nuts, shave it over salads and potatoes, or simply enjoy it on its own.
