Based in Sebastopol, California, William Cofield Cheesemakers is Wine Country’s first proper British-style cheesemaker, producing Old World-style clothbound Cheddar, Stilton-inspired blue cheese, and this Alpine-style, Raclette-inspired stunner, called Walpole. This wheel starts with locally-sourced raw organic cow’s milk, and it’s washed every other day with a culture/brine solution as it ages for three to four months.
Like its Raclette inspiration, Walpole is rich, creamy, nutty, and robust but not overwhelmingly so. And also like Raclette, it’s an ideal melter, perfect for giving grilled cheese sandwiches a little nutty funk or melted over meats, vegetables, or potatoes. Of course, it’s also great on its own.
