A stunning soft-ripened, triple cream, bloomy rind cheese inspired by French classics like Brie and Camembert, Indiana’s Tulip Tree Creamery’s Trillium – its top seller – can easily hold its own against its cousins across the pond. Aged for two to four weeks and made with milk sourced from Country Meadows Farm in nearby Hudson, Indiana, its paste is silky smooth with a soft, buttery texture. The flavor is buttery and milky, with a mild, slightly lactic tang.
This is the kind of cheese you’ll want to go at on its own with a spoon, but you’ll be forgiven if you decide to smear it all over a fresh, crusty baguette and go to town.
