Drawing inspiration from the iconic French cheese St. Nectaire, Blakesville’s Sunny Ridge is a mild, easygoing goat cheese that’s great for beginners. It’s washed with a sour peach beer from Chicago’s Is/Was Brewing, making the rind slightly fruity and bringing out the cheese’s clean, bright, tangy, musky, minerally, and slightly fruity flavors. This cheese is perfect on its own on crusty bread or crackers, but also pairs well with summertime fruits, raw vegetables, and hazelnuts.
In Port Washington, Wisconsin, Blakesville Creamery has been crafting artisan goat cheeses since 2020. As a true farmstead creamery, they make all their cheeses by hand using milk from their own goats. Their cutting-edge, 10,000-square-foot facility preserves traditional cheesemaking techniques while maintaining exceptional quality.
