Neal’s Yard Dairy’s Stichelton is the only traditional raw milk Stilton-style cheese in the world. It’s an extraordinary blue, known for its juicy acidity, toasty biscuit notes near the rind, and deep savory finish reminiscent of beef stock. The fudgy, creamy texture makes it both approachable and complex, offering flavors that can range from green apple brightness to earthy umami depth. Stichelton exists thanks to Joe Schneider and Randolph Hodgson of Neal’s Yard Dairy, who in 2006 set out to resurrect the original raw milk Stilton recipe, banned since 1996 due to production rules. Working on the Welbeck Estate near Sherwood Forest, they created Stichelton using milk from a single morning’s milking, minimal starter, and a 24-hour make to preserve its delicate native flora. The curds are hand-ladled and milled for a soft, delicate texture, then carefully matured both at Stichelton Dairy and in Neal’s Yard’s Bermondsey arches. The result is one of England’s most singular cheeses, celebrated for its complexity and sense of place.
