Point Reyes’s California version of Toma is an all natural, pasteurized, semi-hard, table cheese with a natural rind. Rich and buttery, the master cheesemakers at Point Reyes have added Shichimi Togarashi to create a fascinating nutty, umami flavor with a slight touch of heat and citrus. The result is a fun, full flavored cheese with Japanese spices such as chili flakes, nigella, chili powder, orange peel, ginger powder and nori sprinkled generously throughout the cheese. The combination of a traditional farmhouse cheese with spicy seasoning creates a delightful fusion of flavors from both the Western and Japanese culinary traditions.
