Pleasant Ridge Reserve, from Uplands Cheese in southern Wisconsin, isn’t just any old Alpine-style cheese: It’s the most awarded cheese in American history! This three-time winner of the American Cheese Society’s annual competition is an absolute stunner. Made by head cheesemaker Andy Hatch, it starts with milk from Uplands’ own herd of cows, which is collected only in the summer months when they’re allowed to graze only on fresh pasture – in the style of the most coveted versions of French mountain cheeses Gruyere and Beaufort (its inspiration).
The sweetness from this grass-fed milk combines with the savory flavors that develop from the natural washed rind, and the end result is a masterpiece. It’s deeply complex, with a savory nuttiness and a rich, fruity finish. Other flavor notes include tropical fruit and butterscotch.
