For perishable orders, we line our shipping boxes with Tempguard - a unique, padded insulator made of 100% pre-consumer recycled paper material. We further control the temperature with recycled kraft paper fill and non-toxic frozen gel packs. In the summer months, we may include dry ice to ensure fresh delivery in very hot weather.

Note: Please join our efforts to be mindful of our environment and extend the life-cycle of our packaging, by recycling your shipping box, Tempguard liner, and kraft fill (all 100% curbside recyclable!). Store the gel packs in your freezer and reuse to keep your next picnic or road trip fare cool.

I Siciliani Peperoncino Primo Sale is a traditional Sicilian sheep’s milk cheese crafted using time-honored shepherding methods. The name primo sale means “first salt,” referring to the early stage of the aging process that gives this cheese its signature delicacy. Aged for about 30 days, the fresh curds are pressed into baskets, leaving a distinctive imprint on the outer layer. This young cheese has a bright white color, a supple, semi-soft texture, and a creamy, mild flavor that beautifully balances the gentle heat of red pepper flakes worked throughout the paste.

Because it’s so young, this cheese is exceptionally versatile in the kitchen. Slice it onto sandwiches, crumble it into salads, or melt it gently into pasta dishes for a touch of creamy richness and subtle spice. Its clean, milky flavor also makes it a natural choice for antipasto platters, where it can contrast beautifully with briny olives and cured meats.
