Pecorino Toscano is produced in the Val D’Orcia, a region of Tuscany that’s verdant and hilly, perfect for cultivating the sheep that produce this spectacular cheese.
This cheese is rubbed with olive oil during the careful six-month aging process, and the resulting cheese is firm, rich, and nutty, with grassy, fruity notes, subtle funky, complex overtones and butterscotch on the finish.
