Chosen and aged by the Cravero family for more than 150 years, this Parmigiano-Reggiano is nothing short of masterful. Fifth-generation owner Giorgio Cravero sources his cheese wheels from two skilled cheesemakers who are among only 30 to receive the rare and vaunted Prodotto di Montagna label. The milk comes from cows that have grazed on the high-altitude grasses and flowers of Italy’s Piedmont region, and it’s aged for 24 months.
This cheese is far more versatile than what you might think of as standard for Parmigiano-Reggiano: Yes, it’s perfect as a pasta topping, but it has a smoother, creamier texture than many other Parmigiano-Reggianos, meaning that it’s perfect for snacking, with pronounced notes of butterscotch and pecans. Serve it on a cheese board alongside cured Italian meats, figs, hazelnuts, roasted artichokes, and aged balsamic vinegar.
