A unique, hard-to-find Sardinian goat’s milk cheese with very limited production, Pantaleo is one of the very few aged goat’s milk cheeses produced in Sardinia, an island more associated with its sheep. It’s made with milk from the Capra Sarda, a breed of goat that was only introduced to the Sardinia in the 1960s. The Capra Sarda are infamous for not being great milk producers – and when they do, it’s only for six months out of the year – but the milk they do produce is rich and flavorful.
This semi-firm cheese has a thin rind and an ivory paste, and it’s aged for more than 100 days, which tempers the milk’s “goatiness” while producing a sweet, robust, unique cheese with notes of fresh herbs, white pepper, and lemon. Enjoyed on its own or with a drizzle of honey, this cheese is a true delight, especially for goat cheese lovers.
