Most of the cheeses we traditionally enjoy from the beautiful Italian island of Sardinia are made with sheep’s milk, so we were very excited to get this aged goat’s milk cheese. Pantaleo does not disappoint! Pantaleo cheese has a fascinating lemony, salty-sweet flavor with a clean floral finish. A truly beautiful cheese that is robust and complex in flavor. Grate it, melt it, or simply enjoy on its own or drizzled with honey.
This unique cheese has a limited production because the Capra Sarda produces little milk, and for only about 6 months of the year. Formaggi Santadi uses this precious commodity to make this special cheese, then ages it for a minimum of 100 days to produce a semi-firm texture.
