Nieve de Cabra is a stunning pure white goat’s milk cheese from Cáceres in the region of Extremadura in Spain. Nieve de Cabra was developed to highlight a style of cheese typical of French cheesemaking. Its rich and creamy interior is held together by a thin, bloomy rind. Bright and well balanced, it will satisfy those looking to venture beyond Brie. It’s wildly approachable, starting out semi-soft and becoming creamier and softer as it matures. Wonderful with figs or jam, but we love this served simply with fresh, crusty bread or with apricot and pistachio toasts for cheese. Pair with Cava or Rosé.
