Bornholms Andelsmejeri a.m.b.a is a modern dairy cooperative owned by the dairy farmers on the island of Bornholm. It has been the only dairy on the island since 1972. Bornholm is nicknamed "the Sunshine Island" because its remote position in the middle of the Baltic Sea gives it a special sunlight and more hours of daylight than just about anywhere else in Scandinavia. This exposure to the sun creates the island's lush grazing pastures. The milk used for their blue cheeses comes from the cows of Bornholm, that graze in the fields during all summer, and where the salty wind from the sea influences the flavor of the milk and gives us this unique blue.
Mycella checks all of the marks for a good blue. Made under their St Clemens brand, the recipe is based on Italian Gorgonzola, so this cheese is also known as Danish Gorgonzola or Bornzola. It is mainly called Mycella because its name is derived from the Latin word for fungal filaments (mycelium). This blue is moist and creamy yet crumbles well too. This is a wonderful table cheese and really shines in salads.
