Seeking to create a rival to authentic Camembert de Normandie, cheesemaker Mateo Kehler eventually developed this recipe. Moses Sleeper was a Revolutionary War era scout who gave his life on Vermont's legendary Bayley Hazen Military Road. As far as the cheese goes, it starts with a expertly developed bloomy rind that enrobes a gooey, milky core. Its flavors explode in your mouth: cauliflower, mushroom, creme fraiche, and toasted nuts. The finish is bright and acidic, presenting a perfect foil for the vegetal and savory notes that precede and making it perfect for the after dinner cheese plate.
