This fresh white cheese is the Spanish version of the French fromage blanc, or fresh white cheese, with one major difference: It’s made from 100 percent sheep’s milk instead of the more common cow’s milk (or goat milk, in the case of chevre). Pioneered by Michele Buster and imported to the US under her brand Mitica, this sweet, spreadable fresh cheese is made in the Spanish region of Murcia, with the same rich milk used in production of Manchego.
It’s creamy and dense, with an added complexity and tangy notes from the sheep’s milk. It has a smooth, rich texture similar to cream cheese and a sweet, delicate flavor with a nutty finish, so try spreading it on toast or bagels, in sandwiches, salads, with a drizzle of honey, or topped with olive oil and black pepper.
