MitiBleu is a rare sheep’s milk blue from Castilla La Mancha, Spain. Wishing to create a Spanish sheep blue to rival Roquefort, an entrepreneur in the cheese industry in 2003 built a plant near the medieval city of Toledo. Milk is taken from the plentiful sheep grazing on the plains of La Mancha (better known as Manchego country) and aged up to 4 months to create a blue that is bold and flavorful but packs less bite than its French counterpart.
This is a perfect blue to crumble onto salads or slice onto a hot steak to add a dose of flavor and creaminess. Or really wow your guests and serve it on a cheese board with Pajarero Figs and a glass of Oloroso Sherry.
