For perishable orders, we line our shipping boxes with Tempguard - a unique, padded insulator made of 100% pre-consumer recycled paper material. We further control the temperature with recycled kraft paper fill and non-toxic frozen gel packs. In the summer months, we may include dry ice to ensure fresh delivery in very hot weather.

Note: Please join our efforts to be mindful of our environment and extend the life-cycle of our packaging, by recycling your shipping box, Tempguard liner, and kraft fill (all 100% curbside recyclable!). Store the gel packs in your freezer and reuse to keep your next picnic or road trip fare cool.

Isigny’s 6-month aged mimolette is a semi-firm, golden-orange cheese that reflects the extraordinary dairy heritage of Normandy’s Isigny-sur-Mer region — an area long described for its opulent pastures and mineral-rich, coastal grasslands. Made from milk produced exclusively within this unique terroir, the cheese acquires natural depth, richness, and aroma before aging in Isigny’s traditional cellars. This exceptional quality was recognized when Isigny’s mimolette was awarded “Best Cheese in the World” at the 2023 Lyon International Fair.

Its color comes from natural annatto, added at the beginning of production, while the texture at 6 months remains smooth, pliable, and easy to slice or shave. During aging, the cheeses are turned, brushed, and inspected by Isigny’s master cheesemakers—using traditional techniques such as tapping with a boxwood mallet to ensure proper structure. At this stage, the flavor is fruity, lightly nutty, and gently savory, offering a perfect balance between youthful softness and emerging complexity.

Use it on cheese boards, grate it into warm dishes, fold it into savory pastries, or shave it over roasted vegetables and salads. Its striking color makes any presentation pop, and its flavor adapts well from everyday cooking to elevated plating.
