Award-winning cheesemaker, Marieke Penterman, celebrates her Dutch heritage with this flavored Gouda. She and her team handcraft each wheel using herbs and seeds gathered in the Netherlands. Premium, raw, cow’s milk from her family farm provides each wheel of cheese with the exceptional flavor and texture you’ve grown to expect from Holland’s Family Cheese. Sweet and nutty with flavor notes reminiscent of maple syrup. Enjoy this cheese with toasted almonds, maple oat bread, dark rum or amber beer. Foenegreek, also spelled Fenugreek, is a spice that has a unique maple sweetness, with notes of curry or aged sherry wine on the finish.

Rolf and Marieke Penterman are first generation Wisconsin dairy farmers having moved from the Netherlands to Wisconsin in 2002. Marieke Gouda is their signature cheese made with an authentic Old World Gouda recipe. The equipment, cultures, herbs and spices are all imported from Holland. The rBGH free cows milk couldn’t be fresher being piped directly from the first milking of the day directly into the processing vat. The curd is hand packed into 18 pound forms before going under the press. It is then brined for 60 hours. The wheels are then transferred to the special curing room and aged on Dutch pine planks which absorb the liquid as the cheese ages. For the first 14 days the cheese is turned (flipped over) daily to ensure that the butterfat is evenly distributed throughout the cheese. The wooden planks are also cleaned daily and turned to prevent molds. During this time the breathable coating is hand painted on the cheese. After the initial daily turning is complete the cheese is turned twice weekly for as long as it is in our facility. This multiple award winning cheese is a must-try for anyone interested in American Artisan cheeses.

What’s the best way to store my cheese?
The best way to keep cheese fresh is to store it in the vegetable crisper in your fridge. Before doing so, wrap in parchment or wax paper, then wrap loosely in plastic wrap. You can also buy our exclusive cheese storage bags, specially created to keep your cheese fresher, longer.

Unless used for cooking, we don’t recommend storing cheese in the freezer as this will alter its texture.

What is the best temperature to serve my cheese?
Remove cheese from the fridge an hour before serving, as cheese is best experienced at room temperature to enjoy the full spectrum of flavors.

How long will my cheese stay fresh in the refrigerator?
The length of time cheeses last in the fridge after opening depends largely on the type of cheese. Soft varieties tend to spoil more quickly than hard varieties. Please refer to the table below for a convenient reference:

Our products are always shipped so they will arrive at your door in optimal condition! We’ve carefully selected packaging options that have minimal impact on the environment without compromising on food safety or quality. 

For perishable orders, we line our shipping boxes with Tempguard - a unique, padded insulator made of 100% pre-consumer recycled paper material. We further control the temperature with recycled kraft paper fill and non-toxic frozen gel packs. In the summer months, we may include dry ice to ensure fresh delivery in very hot weather.
