Maia is the goddess of spring, growth, and nurturing (and the origin of the month of May), and Briar Rose Creamery’s Maia is a perfect, mild springtime cheese. It’s a soft, washed-rind organic Ayrshire cow’s milk cheese with a satisfyingly custardy, fudgy texture that gets softer and more luscious with age. It tastes like clotted cream, with notes of sweet corn, straw, vanilla, guava, and smoky bacon. Serve it alongside nuts, dried fruits, and alongside cured meats.
Founded in 2008 by cheesemaker Sarah Marcus, Briar Rose Creamery is a small artisan creamery located in Dundee, Oregon, surrounded by lush forests and the celebrated pinot noir vineyards of the Willamette Valley. Each cheese is carefully handcrafted from start to finish using locally sourced dairy, with milk supplied by two nearby family-owned farms.
