Mahon is the most famous cheese that’s produced on the Balearic Islands, a Mediterranean archipelago off the southeastern coast of Spain. This cow’s milk cheese, from the island of Menorca, is matured for 8 months to a year (hence the “reserva”), rubbed down regularly with butter, paprika, and olive oil during the aging process. The resulting semi-hard cheese has a burnt orange rind and a firm, deep yellow paste with small holes and a slightly crumbly texture that’s smooth and not too dry.
Mahon Reserva is a rich, full-flavored cheese that’s still pleasing and accessible. Its flavor is complex and nutty, with notes of smokiness and caramel along with hints of paprika from the rind. Eat it on its own with a drizzle of olive oil, grate it over pastas and vegetables, or serve with hazelnuts and dried fruits.
